Tostones (Fried Green Plaintains)

This a wonderful side to Dominican spaghetti or rice dishes like Pica-Pica de Locrio and Arenque de Locrio. It tastes like THE BEST french fries ever made!

You will need:

  • Unripe/green Plaintains
  • Fry Pan/Skillet with bottom covered in oil
  1. Peel plaintains: cut end off, slice skin down the length; lift edges and remove the peel.
  2. Cut plaintain into slices, 1/2 inch thick.
  3. Heat skillet to medium heat (6) and place slices in oil. Turn after couple minutes; do not brown. You only want them to soften. Remove from pan.
  4. Place them on cutting board, taking a sturdy, flat-bottomed item to slightly squash them to about 1/4 inch. Do not apply too much pressure or they will be too flat. If they break apart, they are not fried long enough or cut too thick.
    For this I use the bottom of a heavy drinking glass. Most of my Dominican friends use a can, while others have a tostonera.
  5. Refry again, a couple minutes each side till golden and crispy: remove from pan.
  6. Drain on toweling and sprinkle immediately while hot (so it sticks) with sea or kosher salt. Enjoy!
