Simple Cake

This super easy, fast cake takes about 10 minutes to put together and can bake (30min.) while you have dinner. Also good to serve with tea for unexpected guests. Tastes great but is fattening 🙂

I suggest making it regular the first time so you know what it tastes like before experimenting with cutting back the sugar, butter, and using different flavors.

You will need:
Blender
Round cake pan

  • Eggs – 3
  • Butter – 1 cup (can be cut to 1/2, make certain to grease cake pan)
  • Sugar – 1 cup (can be cut to 2/3 cup)
  • Baking Powder – 1 tsp
  • All Purpose Flour – 1.5 cup
  • *Vanilla Extract – 2 or 3 drops
  1. Put butter, sugar, eggs in blender for 4min.
  2. Add baking powder, flour, and blend 3-4 times (pulse). Don’t over mix or cake will be tough.
  3. Add vanilla *or try different flavors:
    2Tbls (or more) maraschino cherry juice; add cherries too
    Orange zest and juice
    2Tbls baking cocoa (my fav is orange/choc. together)
    Candied citrus peel – add this wth the flour in step 2.
    *These are the flavors I’ve experimented with. Let me know if you try something else and how it worked out.
  4. Pour into single layer round cake pan (greased pan if butter in recipe is cut to 1/2).
  5. Bake in oven at 350F for 25min

I prefer a more soft cake but this is more dense like a coffee cake and goes well with coffee or tea.
Serves 8.
